Made from the highest quality Japanese High Carbon steel, which is known for having greater wear resistance, thus keeping it's edge for longer. It is important to note that high carbon steel requires extra care due to the reduced amounts of chromium compared to a stainless steel knife. If not oiled after use the blade will oxidise.
